Harvest Slaw with Citrus Vinaigrette

Ingredients
DRESSING: 1/3 cup orange juice
1/4 cup white wine vinegar
1/4 cup vegetable oil
2 Tbs mayonnaise
1 Tbs Nature Nate’s® Honey
1/2 tsp salt
1/4 tsp black pepper
SLAW: 2 apples, cored and sliced
1 Tbs lemon juice
1/2 head red cabbage, outer leaves removed and cored
2 carrots, peeled
1 (12 oz) bag broccoli slaw
1 orange, peeled and sliced into rounds
1/3 cup dried cranberries, finely chopped
2 Tbs fresh parsley leaves
1/2 cup almonds, sliced
Directions
- Add all dressing ingredients to a measuring cup, and whisk to combine.
- Toss the apple slices in lemon juice. In a food processor fitted with the shredding attachment, shred the cabbage and carrots. Add to bowl with apples. Add broccoli slaw, orange slices, cranberries and parsley. Pour in the vinaigrette, and toss to coat.
- Refrigerate for 2 hours before serving. When ready to serve, add the almonds, and toss to combine.
